What made you decide to become a dietitian?
I chose to pursue dietetics because I have always had an interest in nutrition and love to educate others about the ways we nourish our bodies. I love that we are always learning new things about the science of nutrition to share with our patients.
What's the most important nutritional focus for the patients you serve? Why?
I think one of the most important aspects of nutrition for the patient population I serve is promoting good nutrition for recovery and healing. I currently work in ICU, surgery, and the COVID unit, so helping patients meet their energy and protein needs is important for both preparing for and recovering from surgery and critical illness. Whether it be from oral intake, enteral feeds, or TPN, ensuring our patients are well nourished during their stay is just one of the ways dietitians work within the interdisciplinary team to provide care to patients. I also think it is important to work with patients to provide familiar and preferred foods which can provide a sense of comfort during a stay in the hospital.
If there was one thing you could shout from the rooftops to educate our community on proper nutrition, what would it be?
There is no one size fits all approach to healthy eating! Healthy eating looks different for everyone. A dietitian can work with you to help find what works best for you, your body, and lifestyle by taking into account your unique needs, health conditions, culture, and preferences.
Kelsey's Favourite Overnight Hearty Oatmeal Breakfast

- 1 cup milk
- 1 cup plain yogurt
- 1/4 teaspoon vanilla extract
- 1 tbsp natural peanut butter
- 2 tbsp honey
- 1 cup ripe banana, mashed
- 1 cup large flake oats
- 1 cup fresh mixed berries (blueberries, raspberries and blackberries)
In a medium-sized bowl, mix together milk, yogurt, vanilla, peanut butter, honey, banana, and oats until well blended. Split in two and pour in two separate Mason jars. Top each jar with 1/2 cup mixed berries. Refrigerate for at least 8 hours. Enjoy!
TIP: This recipe can be served warm as well. To enjoy hot, microwave for 1 minute with Mason jar lid off.
